You have the option of homemade mac and cheese, from a box mac and cheese, or leftover mac and cheese from the night before. The eggs are the simple part; but you can make it the same way you would any other omelet. You can add in anything you want, from onion and peppers, to extra cheese or even spinach. The options are as endless as the creative minds who came up with this ingenious dish.


How to Make a Mac and Cheese Omelet

Ingredients:

Macaroni and Cheese Ingredients
  • 16 Oz. Macaroni Noodles
  • ¼ Cup Butter
  • ​¼ Cup Flour
  • ​½ Teaspoon Salt
  • ​½ Teaspoon Pepper
  • ​1 Cup milk
  • 1 ¼ Heavy Cream
  • 1 Cup Shredded Mozzarella​
  • 1 Cup Shredded Sharp Cheddar

For the Omelet:

Omelet Ingredients
  • 16 Oz. Macaroni Noodles
  • ¼ Cup Butter
  • ​¼ Cup Flour
  • ​½ Teaspoon Salt
  • ​½ Teaspoon Pepper
  • ​1 Cup milk
  • 1 ¼ Heavy Cream
  • 1 Cup Shredded Mozzarella​
  • 1 Cup Shredded Sharp Cheddar

Directions:

Basic Macaroni and Cheese
  1. To begin, bring a large pot of water to a boil, salt well. Once the water is boiling, add in the dry past and cook 8-10 minutes or until tender. While the pasta is cooking, begin preparing your other ingredients. You will need everything for the omelet on hand and ready to go into the pan when you start cooking the eggs.
  2. When the pasta is done, drain and rinse with cool water, then set aside.
  3. In a medium sized pot begin melting the butter. Once the butter is fully melted, add in the flour, salt, and pepper. Whisk well and then slowly pour in the milk and heavy cream while whisking until fully incorporated and no lumps of flour remain.
  4. Continue to heat the mixture over medium heat until it begins to bubble. When the mixture begins to bubble, reduce the heat to low and stir in all of the cheese. Continue to stir until it is fully melted and then add the pasta. Fold the pasta into the cheese sauce gently until all incorporated. Allow the macaroni and cheese to rest for five minutes before placing it in the omelet.

The Omelet:

​To cook the omelet, you will need a non-stick 10-inch pan. You can purchase an omelet pan or use another non-stick cookware. You will also need a good nonstick spatula, preferably one that is silicone.

Basic Omelet
  1. Crack the eggs in a bowl and whisk well, until they turn a pale-yellow color.
  2. Begin to heat your preferred pan over medium-low heat and add in the butter.
  3. Add the milk, salt, and pepper to the egg mixture and whisk them. You want to beat as much air into the eggs as possible. If you prefer, you can use a whisk attachment on your mixer or you can use a hand mixer.
  4. Once the butter is melted and well heated, pour the eggs into the pan. Do not stir! Allow the eggs to begin to cook without interruption.
  5. When you can see that the eggs have begun to cook around the outer edge and at the bottom of the pan, use a rubber spatula to gently move the eggs around the pan. Be very gently with your movements and gently lift the pan so that the remaining egg yolk on the top is slowly swirled around and allowed to go under the omelet to finish cooking.
  6. Your eggs should look like a large bright yellow pancake that can easily be moved around the nonstick surface.
  7. Gently flip the omelet over and allow it to cook for a few more seconds. Then, scoop your macaroni and cheese and place it on one half of the large flat omelet. This is the time when you will also want to add in any other items that you want.
  8. Gently flip one side of the omelet over onto the other and allow to cook for only a few seconds for the ingredients to bind. Don’t allow the eggs to brown or overcook.
  9. Remove from pan and serve. You may wish to top your omelet with fresh herbs or more cheese!
